Comprised of two loins from either side of the wild deer, still joined and neatly rolled into an easy carve joint. The loin meat is one of the most prized cuts and one of the most lean, tender and flavoursome.
Typically the loin meat is de-boned from both sides and then either served as beautiful steaks or in a wellington. However for those looking for a stunning roasting dish, you cannot go wrong!
Coat with butter, season with salt and pepper and a few sprigs of rosemary and roast slowly. YUM.
Venison is a dark red meat, low in cholesterol and high in flavour. Very adaptable for all styles of cooking, including barbecue, stewing and roasting. Unlike most roasts from farmed animals there is no fat in wild venison so the joint has to be cooked carefully to stop if from drying out.
